Veraison of Catawba Grapes

There is a point in growing grapes when the fruit is done growing and starts the journey to ripening. When that happens with red/black grapes, the color starts to change colors. In the course of a few days, the cluster will go from being entirely green to entirely red. This is called veraison and marks the point when acidity will start to drop and the sweetness will start to increase.
