A dichotomy in my neighbourhood

The butcher/chef takes a break from preparation at 2am. He's preparing roast pork for the next day. To the observant, behind him is a skinned whole pig. He's preparing his roast pork the old fashion way, one pig at a time. As oppose to the Mc Donald's across the street, that pioneered the industrial revolution in food delivery. Due to the ultra high rent in Hong Kong, the traditional mom and pop shops are struggling against the multi-nationals with deep pockets.
